About Us
Appalam is one of the oldest foods on the South Indian table. A dough of black gram flour and salt, rolled thin and dried, that turns golden and crisp in seconds of hot oil. Booma Appalam makes this everyday staple in Chengalpattu, in Tamil Nadu's Kancheepuram district.
Our range grew around the way people actually eat. A mini pack for a single lunch. A Lunch Special and Dinner Special for the home kitchen. Five-hundred-gram Catering Special packs, in big and small diameters, for the hotels and function halls that serve hundreds of meals at a time. And masala chips, the oval spiced appalam that goes with evening tea.
The smiling face on our pack has become how people recognise Booma on the shelf. Behind it is a simple promise: the appalam you buy today should taste like the one you bought last year.

Black gram flour, salt and time. The recipe that South Indian homes have trusted for generations.
From a pocket mini pack to a 500 g catering pack, the same appalam reaches every kind of table.
Thin, evenly dried discs that puff fast and fry light, with the curled edge appalam is known for.
Manufacturing
Appalam is a patient food. The traditional method has only a few steps, and each one decides how the appalam fries.
Black gram (urad dal) flour is mixed with salt and water and kneaded into a firm, smooth dough. For masala chips, whole spice is worked into the dough.
The dough is portioned and pressed into thin, even discs for appalam, or long ovals for chips. Thickness decides how the appalam puffs.
The discs are dried until firm and brittle. Properly dried appalam keeps for months and fries clean, without absorbing oil.
Dried appalam is counted, sealed into pouches, round packs or strips, and cartoned for shops, hotels and caterers.
